Creamy Cashew Spinach Dip

Well, almost everyone knows that this weekend is one of the biggest snacking weekends of the year. Yep, Superbowl Sunday! I always feel a little bad that I NEVER get invited to Superbowl parties. I mean, NEVER. Sniff sniff… Because while I’m really not interested in football (and all my friends and family know this), I mean, I didn’t even know that Carolina had a team? Is that North or South Carolina? Or do they share it? It seems confusing to me. In any case, I love snacks just as much as anyone, possibly more! And most people go to eat the snacks and watch the commercials anyhow. Come on, be truthful! And even though I haven’t owned a TV for most of my adult life, I like a good commercial now and then too. So for all of you heading to a Superbowl party this Sunday, here’s a super simple recipe that will please the whole crowd. It’s rich and creamy, AND loaded with veggies, gluten-free, and vegan. Serve it with your favorite tortilla chips, GF crackers, or veggies sticks, or go traditional and put it in one of those brown bread bowl thingies. I guess it wouldn’t be GF then, though. Anyhow, have fun all you Superbowl party animals! And may the best commercial win!


Prep Time: 1 hour unattended, 10 minutes active Total Time: 10 minutes


Ingredients:

1 container (6oz) Red Lotus Foods Creamy Cashew Spread (Sundried Tomato & Black Garlic OR Roasted Garlic & Herb)
¾ c of your favorite vegan mayo
½ bag frozen spinach (organic is better), allowed to thaw for about 1 hour, and well drained
1 can (8oz) water chestnuts, drained and chopped
1/2c chopped red bell pepper (organic is better)

How to make it:

Allow Creamy Cashew Spread and Sour&Creamy Topping to come to room temp, about one hour. Mix together in a medium bowl until combined. Add veggies and mix well. Add salt and pepper to taste. Refrigerate for several hours to allow flavors to blend. Serve with your favorite tortilla chips or crackers.

Optional add ins: 1T Sriracha OR 1T grated red onion OR substitute roasted red pepper for fresh
