Creamy Sun-dried Tomato Pasta Salad



This dish can be served warm as a mac-n-cheese, cold as a pasta salad, or at room temp. There are lots of veggies in it to balance the pasta and it cooks up in about 30 minutes. It's GF and Vegan.

Serves 6 as a side dish.

Ingredients:

6oz (dry) Mrs. Leeper's Corn Elbows, cooked according to package directions.

Combine in a medium frying pan and saute until softened, with or without oil:

1/2 large red onion diced

1 small white onion diced

2/3 stalks celery chopped

1/2c fennel chopped (save fronds for garnish)

1/2 of a large purple daikon radish chopped

Dressing:

1 tub Red Lotus Foods Sundried Tomato & Black Garlic Creamy Cashew Spread

1/2 unsweetened almond milk

2T lemon juice

salt, pepper, and celery salt to taste

Combine all dressing ingredients in a bowl and mix until smooth and creamy, pour over macaroni and sauteed veggies, mix gently and serve.
