VegFeast and Cheese Balls! Pittsburg, Nov. 2016

 

Check out how we spent last Sunday: at the Pittsburgh VegFEAST 2016! We donated hors' d'oeuvres (cheeseballs!!!) for this Vegan Thanksgiving dinner for 250 people. A host of PGH vegan restaurants donated the amazing dinner portion. Sooooo delicious! And all the proceeds were for the benefit of Justice for Animals and Animal Rescue League Shelter & Wildlife Center. What a fabulous evening!

Sundried Tomato & Black Garlic Cashew Cheese Ball

 

 

1 6oz tub Red Lotus Foods Creamy Cashew Spread with Sundried Tomato & Black Garlic, softened 

1T kalamata olives, chopped

1T chopped walnuts

1T Daiya Cheddar-style shreds

2T raw hulled hemp seeds

In a medium mixing bowl combine all ingredients, wrap in plastic wrap, form into a ball and refrigerate for several hours until firm. Remove from plastic wrap and roll in hemp seeds. Serve with veggies and crackers.

Roasted Garlic & Herb Cashew Cheese Ball

 

1 6oz tub Red Lotus Foods Creamy Cashew Spread with Roasted Garlic & Herb, softened 

1/4 cup extra firm organic tofu, mashed

1/4 cup Daiya Mozzarella-style shreds

1T dijon mustard

1T canned pickled jalapenos

Sea salt to taste

1/4 cup chopped parsley and tarragon

In a medium mixing bowl combine all ingredients, wrap in plastic wrap, form into a ball and refrigerate for several hours until firm. Remove from plastic wrap and roll in herbs. Serve with veggies and crackers.

Spirulina Bleu Cashew Cheese Ball

1 6oz tub Red Lotus Foods Creamy Cashew Spread Spirulina Bleu, softened 

1T chopped dates

1T minced parsley

1T chopped walnuts

2t minced shallots

1t lemon zest

Dash of pepper

Sea salt to taste

1/4 cup pomegranate seeds

In a medium mixing bowl combine all ingredients, wrap in plastic wrap, form into a ball and refrigerate for several hours until firm. Remove from plastic wrap and roll in pomegranate seeds to coat. Serve with veggies, apples, and crackers.
